Messages are neither signed nor encrypted at all. You will only be able to tell this after you have sent a message and its contents therefore already leaked to the mail transfer topology. S/MIME encryption is supposed to prevent this. S/MIME signing is supposed to assure messages haven't been tampered with. Since that doesn't work, there's no way for the recipient to tell, either, still.
